Kefir Culture
Kefir is the oldest cultured dairy product known to mankind. It means "gift of God" and is credited with a great number of health benefits including long life. "Kefir" available commercially in America is really more of a drinkable yogurt. (Kefir refers both to the culture and the substance produced from the culture.) True kefir (substance) is slightly alcoholic and effervescent.
Unlike commercial yogurts which contain only a few different microbacteria, a true kefir drink has perhaps 50 different types of organisms including yeasts which thrive on milk sugars.
